Sure you can, I have been running my Zeus X with a single coil since I got it. The trick is to use a 4mm ID coil so that you have enough cotton to fill up the juice channels.

The Nitecore Q2 and Q4 are perfect for 21700 cells with room to spare, avoid stuff like the Efest Luc V6 unless you're only going to use 18650s, there is no way a 2x700 cell fits in there.

They are both great cells for your application, either one will be just fine. Get the cheaper of the two, or get the 21700 for less chance of battery rattle, or get the one which has the most appealing colour to you :)
